Warm Chicken Wraps
Flavorful chicken wraps with a zesty marinade, fresh vegetables, and warm tortillas

1.Make marinade
Combine 4tbsp wholegrain mustard, 2tbsp lime juice, 1tbsp ginger, grated and fresh coriander (cilantro) leaves in a large bowl to form a marinade.
2.Marinate chicken
Mix marinade with chicken thigh fillets, skin removed, cut into strips and leave to sit for to or preferably overnight.
3.Cook chicken
In a large non-stick frying pan, cook chicken in batches. Once cooked, place on a plate and cover with aluminium foil to keep warm. Discard left over marinade.
4.Warm tortillas
Warm 4pcs corn tortillas in the microwave, oven or a sandwich press.
5.Assemble wraps
Top tortillas with iceberg lettuce, medium cucumber, sliced into thin strips, large carrot, grated, spring onion, green tops only, finely chopped tops and finally the cooked chicken. Fold wrap around filling and enjoy!
