Yields: 200 g Lime Curd(2 week shelf life)

Grate the lemon rind to get lemon zest.
Squeeze out the lemon juice and strain.

Beat the 1pcs eggs in a bowl. Put it in a bain-marie alongside the {{ }}, 6tbsp sugar and step 1, and stir.
